# Sweet Creamy Rice
This is a traditional Portuguese sweet, sprinkled with cinnamon, usually cooked by our grandmothers with love
# Ingredients
- 1 large cup carolina rice
- 1+1/2 large cup hot water
- 3/4 large cup sugar
- 2 lemon peel
- 1 cinnamon stick
- 2+1/2 large cup semi-skimmed milk
- 1 tablespoon vegetable margarine
- q.s. cinnamon powder
- q.s. salt
- 3 eggs, just the yolks

# Method
Wash the rice and cook it in hot water, with a pinch of salt. Let the rice completely absorb all the water, if the rice is not yet cooked, add a little more hot water, and let it cook over low heat.
Add the sugar, lemon peels, cinnamon stick, milk and vegetable butter to the pan and stir well until all the ingredients are completely incorporated.
Continue to stir for another 6 to 8 minutes, and finish as soon as it starts to thicken.
Separate the yolks and mix them a little. Remove 1 to 2 tablespoons of rice from the pan and add to the yolks, stirring quickly.
Remove the lemon peel and cinnamon stick. Add the mixture with the egg yolks to the pan and stir for another 2 to 3 minutes.
# Tips
It should be served warm or cold in small bowls or on a platter, sprinkled with cinnamon. Enjoy!
