# Sweet Creamy Rice

This is a traditional Portuguese sweet, sprinkled with cinnamon, usually cooked by our grandmothers with love

# Ingredients

  • 1 large cup carolina rice
  • 1+1/2 large cup hot water
  • 3/4 large cup sugar
  • 2 lemon peel
  • 1 cinnamon stick
  • 2+1/2 large cup semi-skimmed milk
  • 1 tablespoon vegetable margarine
  • q.s. cinnamon powder
  • q.s. salt
  • 3 eggs, just the yolks

  • Large pot
  • Mixing bowl
  • Mixing spoon
  • Measuring cup
  • Measuring spoons

# Method

  • Wash the rice and cook it in hot water, with a pinch of salt. Let the rice completely absorb all the water, if the rice is not yet cooked, add a little more hot water, and let it cook over low heat.

  • Add the sugar, lemon peels, cinnamon stick, milk and vegetable butter to the pan and stir well until all the ingredients are completely incorporated.

  • Continue to stir for another 6 to 8 minutes, and finish as soon as it starts to thicken.

  • Separate the yolks and mix them a little. Remove 1 to 2 tablespoons of rice from the pan and add to the yolks, stirring quickly.

  • Remove the lemon peel and cinnamon stick. Add the mixture with the egg yolks to the pan and stir for another 2 to 3 minutes.

# Tips

It should be served warm or cold in small bowls or on a platter, sprinkled with cinnamon. Enjoy!
