# Sweet Potato and Red Lentil Curry
This curry is one of my absolute favorites for the cold season! It serves 3 people.
# Ingredients
- 450 grams sweet potatoes
- 1 big red bell pepper
- 200 grams pre-soaked red lentils (or soak them overnight beforehand)
- 2 medium-sized onions
- 2 garlic cloves
- 1 tablespoon olive oil
- 500 milliliters of coconut milk
- 250 milliliters of vegetable broth
- 2 tablespoons tomato puree (concentrated)
- 2 tablespoons of curry powder
- 2 tablespoons of turmeric powder
- 1 tablespoon of garam masala spice mix
- salt and pepper, to taste
# Tools
- cutting board
- knives
- potato peeler (or a peeling knife)
- a big pot
- a ladle
# Method
- Peel the sweet potatoes and dice them
- Dice the bell pepper
- Peel and cut the garlic into fine pieces, or use a garlic press
- Cut the onions into small pieces
- Heat the olive oil in a large pot on medium heat and sauté the onions
- Add the garlic and fry along briefly, then add the sweet potatoes and the bell pepper
- Add the tomato puree and the spices and fry along briefly
- Add the lentils, coconut milk and vegetable broth and stir well
- Let it simmer for about 25 minutes
