# Sweet Potato and Red Lentil Curry

This curry is one of my absolute favorites for the cold season! It serves 3 people.

# Ingredients

  • 450 grams sweet potatoes
  • 1 big red bell pepper
  • 200 grams pre-soaked red lentils (or soak them overnight beforehand)
  • 2 medium-sized onions
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • 500 milliliters of coconut milk
  • 250 milliliters of vegetable broth
  • 2 tablespoons tomato puree (concentrated)
  • 2 tablespoons of curry powder
  • 2 tablespoons of turmeric powder
  • 1 tablespoon of garam masala spice mix
  • salt and pepper, to taste

# Tools

  • cutting board
  • knives
  • potato peeler (or a peeling knife)
  • a big pot
  • a ladle

# Method

  1. Peel the sweet potatoes and dice them
  2. Dice the bell pepper
  3. Peel and cut the garlic into fine pieces, or use a garlic press
  4. Cut the onions into small pieces
  5. Heat the olive oil in a large pot on medium heat and sauté the onions
  6. Add the garlic and fry along briefly, then add the sweet potatoes and the bell pepper
  7. Add the tomato puree and the spices and fry along briefly
  8. Add the lentils, coconut milk and vegetable broth and stir well
  9. Let it simmer for about 25 minutes
