# Coconut Fish

This is a special kind of fish, which is originated from the coastal region of Kenya. It is easy to make and is best served with hot rice or hot ugali

# Ingredients

  • 2 cups of coconut milk
  • 1 whole deep fried Tilapia fish
  • 3 red tomatoes
  • 2 onions
  • 2 bunches of dhania
  • 2 tablespoons of blackpepper
  • 1 tablespoon of salt
  • 2 tablespoons of cooking oil

# Tools

  • A non-stick pan
  • A chopping board

# Method

  1. Cut the onions into small diced pieces.
  2. Place the pan on the heat.
  3. Pour the oil into the pan.
  4. Add the onions and wait till they are golden brown.
  5. Add the tomatoes and cover till the tomatoes are soft.
  6. Add the salt and the black pepper.
  7. Add the fish and pour in the coconut milk.
  8. Let it simmer for 40 minutes.
  9. Serve with hot rice. Enjoy!!

# Tips

If you don't like coconut milk, you can use plain yoghurt
